Fried Shiitake Mushrooms with Micro Red Amaranth and Micro Arugula


Ingredients:
1 pint of shiitake mushrooms
1 lemon
2 Tbsp olive oil
1 tsp sea salt
1 tsp micro red amaranth
1 tsp micro arugula

Cooking Directions: Before frying, pre wash mushrooms. Pour olive oil in pan, warm up in medium heat and add mushrooms. Fry for 10 minutes in medium heat. Add lemon juice and continue to fry for 5 more minutes. Place fried mushrooms on a plate and spread fresh organic micro red amaranth and micro arugula on top. Serve with fresh lemon on the side.
